Turkey or Chicken Soup

2 c. cubed cooked turkey or chicken
turkey or chicken carcass
1 c. chopped celery
1 carrot, sliced
1 onion, chopped
2 tsp thyme
2 tsp marjoram
salt

Remove meat from carcass and set aside. Crack bones and place in large soup pot. Cover with water. Add thyme, marjoram, salt and vegetables. Simmer 2 hours. Cool slightly. Remove bones, either pick out or strain. Chill. Skim off fat. Add meat, and salt to taste. Simmer until hot.
